1 pound mashed potatoes
2 1/2 tablespoons coconut oil (or light olive oil)
3/4 cup gluten free flour (I use Dove Farm)
1 medium egg
4 stalks of spring onions
1 teaspoon gluten free baking powder
3/4 teaspoon salt
Extra gluten free flour for rolling dough (us Irish call it fadge)
Extra oil to brush over the top before frying
Put the mashed potato into a large bowl and add the egg and the coconut oil. Slice the 4 stalks of spring onions (roughly about 1cm) and add to the mixture. Add the dry ingredients and mix well.
Sprinkle the extra flour over your counter top/board and roll out the dough to approximately 1/2 inch thick. Now cut into cute little shapes, brush with oil on both sides and fry for around 3minutes on each side until both sides are golden brown.
Repeat the process until all the dough is used.
