3 or 4 Chicken breasts
Large handful of coriander (cilantro)
1 Birdseye chilli
Juice of half a lime
1 tbspn fish sauce
2 garlic cloves
Salt & pepper to season
Add all ingredients into a food processor and blend until pureed. Take a small handful of the mixture and roll into a ball, place the ball onto parchment paper and press down to form a burger shape (about 1/2inch thick). Repeat this process until you have about 6-8 burgers.
Heat a griddle pan (or frying pan) on the stove and spray with a light olive oil. Once hot, place all the burgers into the pan and cook on both sides for approx. 4mins and cooked through.
Serve with a crunchy Thai salad and lime wedges.
