250g Macaroni or other gluten free pasta of choice
1 whole broccoli (broken into florets)
1 heaped tbspn Spirulina powder (I use Miracle Powders)
3 tbspn pesto
Handful of feta cheese (crumbled)
Handful of fresh basil (torn)
1 lemon (juice and zest)
Salt & Pepper to season
Cook the macaroni/pasta as instructed (normally around 8-10mins). Break the broccoli into florets and steam in a small amount of boiling water. Drain both the pasta and broccoli and mix together. Add the pesto and mix. Take a heaped spoonful of spirulina powder and mix well so that the salad is given an added kick of green! Tear a handful of fresh basil on top and squeeze the juice of lemon over the pasta.
To finish, grate the lemon zest and crumble a handful of feta all over the salad.
